If you can get some organically produced cheese, then you will have one of the best veggie burgers that you can ask for. You get extra points for using avocado as the spread to bring your fixings together. If you want to spice the veggie burger up a bit, it would be easy to add some jalapeno slices to the batter before you cook it solid.

That makes the perfect compliment for the creamed spinach. If you wanted to add meat to this recipe, the suggestion would be for some kind of lean chicken breast that has been sealed until the outer edges have become crispy. Sprinkle the chicken breast with a pinch of salt, a few squirts of lemon juice, and some freshly minced basil and oregano.

All you have to do, is choose a good vegetable mixture that suits your tastes and lightly fry it with oil, and season to taste with some organically made sauces. If you have even made bone broth, then that might be a good option for a side dish for soup, or for flavoring the squash.

If you’re going to make fish tacos, then it would probably be a good idea to get some decent fish to make them. You should try and find the freshest fish available, and hopefully that means it was caught that day! Bake your fish with a recipe that you find online and bake it at 375F. Once the fish is done, you can take it and drop each piece into a large romaine leaf to make delicious wrap and even add some doTERRA lemon oil to add some extra flavor! The final touch can be a tablespoon of the sour cream and avocado mixture on each of the wraps.

Monday “Make n Take”

You can easily make your own dishwasher tablets following this simple step by step. They will clean your dishes naturally.
1. Put 1 cup Baking Soda, 1/4 cup Citric Acid, 1 Tablespoon of On Guard Cleaner Concentrate and 3 drops Grapefruit Essential Oil in a mixing bowl
2. Mix together until the mix has an even consistency.
3. Place in silicon moulds and let sit 4 hours.
4. Store in an airtight container.
5. Use in your dishwasher instead of store bought dishwasher tablets!

Spinach Stuffed Portobello Mushrooms

Spinach Stuffed Portobello Mushrooms (servings 4)

Ingredients:

 4 Portobello mushroom caps, stems removed, wiped clean

 Olive oil cooking spray

 1 teaspoon kosher salt, divided

 ¼ teaspoon black pepper, divided

 10oz frozen chopped spinach

 2 tablespoons olive oil, divided

 1 small onion, finely chopped (6oz)

 1 tablespoon minced garlic

 ¼ cup grated Parmesan

Directions:

1. Preheat broiler, setting temperature to high. Set oven rack in the middle of the

oven. Line a baking sheet with foil.

2. Spray the mushroom caps with olive oil cooking spray on both sides. Sprinkle

with ½ teaspoon kosher salt and ⅛ teaspoon black pepper. Broil 5 minutes on

each side, or until just tender.

3. Meanwhile, defrost spinach in the microwave according to the directions on the

package (my package said to cut a small slit in the wrapper, place on a

microwave-safe plate and microwave for 4-6 minutes). Place in a colander to

drain. When cool enough to handle, press on the cooked spinach with your hands

and extract as much water as possible out of it. Repeat this until you're sure you

can no longer extract more water.

4. Remove mushrooms from oven. Heat 1 Tbsp. olive oil in a large skillet over

medium heat, about 3 minutes. Add the onion and cook 5-7 minutes, stirring

occasionally, until golden. Add the garlic, spinach, ½ teaspoon kosher salt and ⅛

teaspoon black pepper and cook, stirring to combine everything, 1-2 more

minutes. Remove from heat and allow to cool a few minutes, then mix in the

Parmesan.

5. Evenly distribute the spinach mixture among the mushrooms. Don't press down

on the filling – it's prettier when it's piled high on top of the mushrooms.

6. Place back under the broiler for 2-3 minutes, or until filling is golden.

Healthy Egg Muffin Cups (servings 12 muffins)

Ingredients:

 1 tablespoon olive oil

 1 cup red, green and yellow bell pepper chopped and measured after chopping

 2 cups baby spinach – roughly chopped measured/packed before chopping

 1 cup mushrooms measured before chopping

 2 cloves garlic minced

 salt to taste

 4 whole eggs

 4 egg whites

 hot sauce optional for drizzling on top!

Directions:

1. Preheat oven to 350 degrees F.

2. Grease a standard 12-slot muffin pan with cooking spray and set aside.

3. Heat a large non-stick skillet over medium heat.

4. Once hot, add in oil, red pepper, green pepper, and onion and sauté 5-7 minutes,

or until peppers are tender.

5. Add in spinach and mushrooms and cook for an additional 2 minutes.

6. In the last 30 seconds, add in minced garlic.

7. Season with salt and remove from heat.

8. Crack eggs/egg whites into a large 4 cup measuring cup and whisk together.

9. Stir in cooked veggies.

10. Pour the egg/veggie mixture evenly into the prepared muffin pan.

11. Bake for 15 minutes, or until the tops are firm to the touch and eggs are cooked.

12. Cool slightly and serve immediately!

13. Leftovers can be stored in an airtight container in the fridge for about 4 days.

14. These may also be frozen.

15. To reheat, pop them in the microwave until warm.

Chicken Avocado Burger (servings 4)

Ingredients:

 1 pound ground chicken

 1 large ripe avocado – cut into chunks

 1 chopped clove of garlic

 ⅓ cup Panko crumbs or Almond meal

 1 minced Poblano or Jalapeño pepper (optional but recommended)

 ½ teaspoon salt

 ¼ teaspoon pepper

Directions:

Add all ingredients to a large bowl and toss gently.

Shape into desired size patties and grill inside or out!

Perfect Mashed Sweet Potatoes

Perfect Mashed Sweet Potatoes

Perfect Mashed Sweet Potatoes (servings 6)

Ingredients:

 2 pounds sweet potatoes, peeled and cut into 2-inch pieces

 1 tablespoon salted grassfed butter or coconut oil (for vegan option)

 1/4 to 1/3 cup whole milk or unsweetened almond milk (for vegan option)

 1/4 teaspoon salt

 1/4 teaspoon ground cinnamon

 1/4 teaspoon ground ginger

 pinch nutmeg

Directions:

Put the sweet potatoes in a large pot and add just enough cold water to cover them.

Bring to a boil and cook until fork-tender, about 15 minutes. Drain and return to the

potatoes to the pot on the stovetop with the burner turned off. The residual heat

from the pot will help any excess water burn off.

Add the remaining ingredients, using only 1/4 cup liquid to start and adding more if

needed, and mash until smooth and well-combined. Serve immediately.
